Kiddo's Tomato Soup

Ingredients

  • 1 gallon of canned tomatoes prefer buying diced so I don’t have to
  • 1 heaping teaspoon of baking soda
  • One onion - chopped
  • Several stalks of celery - chopped
  • 1 teaspoon season salt Lawry's
  • 4 cups chicken broth
  • 1 1/2 quarts of cream
  • Parsley Flakes

Method

  1. Saute onion and celery in butter.
  2. Put tomatoes in a pot and bring to a low boil.
  3. Add baking soda and remove from heat. Stir the froth down and return to the stove. The soda takes the acidity out of the tomatoes and it simply is smooth and perfect for the North Dakota winters.
  4. Add sauteed veggies, season salt and chicken broth to tomatoes.
  5. When soup is warmed through, add cream and parsley flakes.
