Cucumber Boat Chicken Salad

Ingredients Method

Ingredients
  

  • 1 can of chicken breast drained
  • 1 cucumber
  • 1 piece of celery chopped
  • 1/2 cup of diced apples
  • 1/2 cup red grapes halved
  • 1/4 cup craisins
  • 1/4 cup chopped nuts I usually use almonds or pecans
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1 tsp parsley
  • 1 tsp basil
  • 1/4 tsp celery salt
  • 1/4 cup mayo

Method
 

  1. Slice cucumbers in half lengthwise, scoop out cucumber and place in bowl chopped.
  2. Set cucumber boats aside
  3. Mix remaining ingredients with chopped cucumber in bowl
  4. Scoop chicken mixture and place inside the boats
  5. Enjoy!
