Strawberry Spinach Salad
Ingredients
- 10 Chicken Breasts
- 1/2 bunch Cilantro
- ¼ cup Lime juice
- 1 tsp Lime Zest
- 1 Tbsp. Honey
- 8 oz. Club Soda
- Salt & Pepper
- Chicken, cubed
- Spinach Mix
- 1 small carton Strawberries, diced
- 2 Large Tomatoes, chopped
- ½ bunch Cilantro, chopped
- 2 cups Blueberries
- ? cup Green onions, chopped
- ½ Jalapeño, finely chopped
- 1 Tbsp Honey
- ¼ cup Lime Juice
- Chipotle
- Salt
- Poppy Seed Salad Dressing (I used Panera)

Strawberry Salsa:
Instructions
- Combine all marinade ingredients in a blender. Blend until smooth.
- Marinate chicken overnight in plastic bag in refrigerator.
- Bake or grill at 375° for 25-35 minutes until done.
- Refrigerate chicken with pan drippings.
- I put the chopped chicken in a ziplock bag for the cooler and brought the strawberry salsa mix in a bowl. We added the Poppy Seed dressing in the field. It was awesome and we have leftovers for tomorrow!
