Orange Rhubarb Bread
Ingredients
- 1 cup sugar
- 1/2 cup oil
- 2 eggs
- 1/2 cup milk
- 2 tsp grated orange peel
- 2 1/4 cups flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 1/2 cups finely chopped rhubarb
- 1/2 cup sliced almonds
Instructions
- Grease bottoms only of two loaf pans. Preheat oven to 350 degrees.
- Mix together first five ingredients.
- Whisk together the flour and baking powder and add to the liquid mixture.
- Add rhubarb and put into greased pans.
- Top with almonds, lightly press down and sprinkle with 1 tablespoon sugar.
- Bake at 350 degrees for 45-55 minutes. Cool for 2 hours on rack.
