This is the recipe for Noodles and Butterballs handed down to me from my Grandmother, Freda Schick Deal. She was a first generation American whose parents had immigrated from the Volga region of Russia to Shattuck, Oklahoma. This is a common meal for that culture.
NOODLES AND BUTTERBALLS
Make egg noodles and cut very thin, the size of spaghetti.
Butterballs:
8 cups toasted, dried bread crumbs
1 large or 2 small eggs
½ teaspoon allspice
½ teaspoon salt
1 cup heavy cream
Mix all together and form into balls about the size of walnuts. Cook in boiling chicken broth until done. Add noodles and cooked chicken or turkey and cook until noodles are done. Butterballs should not fall apart. If they do, add another egg.
