These are my “go to” potatoes in a hurry.
Simply clean and quarter red potatoes, layer with olive oil and a package of Lipton onion soup mix.
Microwave on high for four minutes. Let rest for two minutes, then cook again for four minutes…continue till potatoes are soft. The microwave time depends on the size of Corning Ware and microwave! Always a crowd pleaser!!
