It’s Been a Month on the Road and Sandwiches are Boring!

I figured it was time I write an update.

I looked back to see how long we’ve been on harvest and I was surprised to see it’s been over one month. I mean, we just left home last week didn’t we?!? No, we are at our third stop already so, it’s definitely been a month! The time is flying by!

We have been pretty steady with a few rain days mixed in. We did have a fair bit of rain in Southern Kansas that started to look like we might get held up there but it straightened out and we made it on time to the next job. The rain can be so welcome, yet so stressful for the harvester. I don’t think anyone wants to be late for the next job but after many long days, it is nice to sleep in, even if it is just an extra hour!

We were surprised to find 40-60 bushel averages on some field in Kansas, that was not expected but very welcome. Unfortunately, some fields would average 15 to 20 bushels so it brought down the overall average. But, I think our clients were happy, overall, with what they got, especially for the kind of year it has been.

I, myself, have been busy with the usual HarvestHER jobs. Cooking, grocery shopping, cleaning, moving equipment, and running combine when needed. The girls and I have been lucky to have some pool days, as well as a couple of days visiting with my sister in Colorado.

I’ve been looking for new ideas for breakfast and lunches. My guys make their own lunches which always consists of sandwiches, treats, and fruit. I noticed they weren’t going through lunch meat as fast as they had been, so I started scouring Pinterest for ideas. After looking at several wrap ideas and thinking they may not be that convenient to eat while operating a combine, tractor or truck, I came up with this pizza wrap. Of course, I made it for them but they really enjoyed them and I’m willing to do that for them a few times a week if it keeps them happy and full!

I will be experimenting with some more in the near future because I LOVE to come up with new ideas for meals. I think that’s one of the reasons I like to cook for a harvest crew, it’s a great time to try new things! They’re my guinea pigs…no picky eaters allowed😉

Recipe ingredients.

Pizza wraps

Tortilla shells, burrito size
Pizza sauce
Meat of choice (I used ham, salami, & pepperoni)
Mozzarella cheese

Spoon 1-2 tablespoons pizza sauce on tortilla. Layer meat, top with some mozzarella cheese, add a little more pizza sauce, if desired, then roll up. I roll from one side, then roll the ends in and then continue rolling. I wrapped them in waxed paper but am looking at better options.

*I used the Oscar Mayer sub kit with ham and salami. I split the meat in half, using two slices each of the ham and salami and six pieces of pepperoni.
