Cooking doesn’t always go smoothly and perfectly. It is kinda like combining. The hotter the day, the more that can go wrong…from the microwave to the taster’s taste buds! Sometimes I just deal and move on to the next meal.
So I tried this, but it was one of those recipes you add a little extra in to fill a 9×13 (mostly mashed potatoes). I used a can of corn instead of the vegetables, more meat and about twice the amount of potatoes. I sprinkled with cheese and baked.
Most of the crew ate it and liked it. Myron preferred separate mashed potatoes and meat but thought it was good! It’s not always easy trying to please everyone.
So, then I thought I’d make Scotch-a-roos…no one has ever not liked these!
As almost always, I double the recipe (of most 9×13 pan recipes) and use my 18 x 12. It works perfectly for the Scotch-a-roos. The picture above shows one batch in the pan
Today, it was in the frosting that I had a little “flub”. Ultimately, I cooked a little too long in the microwave. My chips weren’t frozen and even though this microwave in my camper is slow. it worked fast😤 on the chips. I ended up adding a little oil to smooth out. Hence, not the perfect shiny frosting I am used to…but still good!
Just keeping it real, ladies! What do you do if chips melted a little too long and there wasn’t enough to make another batch???
Gonna play it safe tonight and make spaghetti! That’s always a winner!
