We tried a new casserole last night and the guys gave the go-ahead to make it again.

Ingredients

  • 1 1/2lbs ground beef
  • 1 10oz can fire roasted Rotel
  • 1 4oz can diced green chiles
  • 1 packet taco seasoning
  • 2 1/2 cups Bisquick
  • 1 3/4 cups shredded cheddar cheese, divided
  • 1 red bell pepper, diced
  • 1/2 yellow onion, diced
  • 1 cup water
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tsp garlic powder

Instructions

  1. Heat oven to 350 and grease a large 9x13 pan.
  2. Brown hamburger, onion and pepper. Drain and set aside. Add taco seasoning, salt and pepper and a little water if needed.
  3. In medium bowl combine sour cream, mayo, 1 cup shredded cheese, green chiles and garlic powder.
  4. In separate bowl combine Bisquick with 1 cup water and mix together till a soft dough forms.
  5. Press dough into the bottom of the greased 9x13. Then bake for 5-7 minutes or till lightly golden.
  6. Remove from oven and spread taco meat over biscuit layer, then top with layer of Rotel tomatoes.
  7. Top everything off by spreading sour cream mix over tomatoes, then cover with remaining shredded cheese.
  8. Bake for 30 minutes or until warmed through.
  9. Let stand for 5 minutes or so before serving.
  10. ** I baked it in a 10x13 dish and still could've used more room.
