We tried a new casserole last night and the guys gave the go-ahead to make it again.

Cattle Drive Casserole
Ingredients
- 1 1/2lbs ground beef
- 1 10oz can fire roasted Rotel
- 1 4oz can diced green chiles
- 1 packet taco seasoning
- 2 1/2 cups Bisquick
- 1 3/4 cups shredded cheddar cheese, divided
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
- 1 cup water
- 1/2 cup sour cream
- 1/2 cup mayo
- 1 tsp garlic powder
Instructions
- Heat oven to 350 and grease a large 9x13 pan.
- Brown hamburger, onion and pepper. Drain and set aside. Add taco seasoning, salt and pepper and a little water if needed.
- In medium bowl combine sour cream, mayo, 1 cup shredded cheese, green chiles and garlic powder.
- In separate bowl combine Bisquick with 1 cup water and mix together till a soft dough forms.
- Press dough into the bottom of the greased 9x13. Then bake for 5-7 minutes or till lightly golden.
- Remove from oven and spread taco meat over biscuit layer, then top with layer of Rotel tomatoes.
- Top everything off by spreading sour cream mix over tomatoes, then cover with remaining shredded cheese.
- Bake for 30 minutes or until warmed through.
- Let stand for 5 minutes or so before serving.
- ** I baked it in a 10x13 dish and still could've used more room.
