When my mother called me up last week and said, “Hey is it ok if I come help do some food prep and help you get some meals in the freezer for spring seeding?” My immediate reply was, “How soon can you get here?”
So even though I know my mom has one hundred and one things to do of her own, and a big yard to get ready for a family reunion…she volunteered her time to come to the other side of the province to help us out. (Of course, that’s just who my mom and my parents are…putting aside their own things to go help one of their kids.)
I am thankful for a mother who understands my busy schedule. She knows that teaching full-time and running three teenage kids to activities doesn’t leave a whole lot of time to cook for the crew. Perhaps she wanted to make sure that my husband, Lee, and his crew get more than a boiled hotdog (which she knows that Lee dislikes very much!)
So we spent last Saturday making up freezer meals. It was a full day filled with creating Regular Lasagnas and some Buffalo Chicken Lasagnas, Shepherds Pie, Tater Tot Casseroles, Bacon Cheeseburger Potato Casseroles and many more. Thank goodness for my good friend, Shauna, who was visiting that day and kept her elbows busy in the dishwater, doing our dishes while we created the huge mess! (I would cook all the time if I had someone standing by to do the dishes – what a huge help) So…thanks to my mom, we now have a freezer full of meals that will help get us through seeding! One of mom’s specialties is meatballs. She made up numerous batches and precooked them so that I can just thaw them and add them to the sauces.
Did I mention that she also made cinnamon buns? Now, I just need to convince her to tag along this summer when we go to the USA for custom harvesting!
On this Mother’s Day I just want to say three little words, Thank You, Mom. How can you thank someone for a lifetime of love? How can you thank someone for setting a powerful example of how to be a mother, a wife and a woman? Thank you MOM for being a constant source of support and thank you for defining what family is. Thank you so much for the years of love . Thank you for all that you have been and all that you are.
