After reading several “muffin breakfast ideas” and googling recipes, I simply came up with my own (mostly due to what I had in the house/fridge).
I believe they will be an easy and quick “microwave/heat and eat” kind of breakfast.

10/17/16 – Breakfast Egg Muffins
Ingredients
- Tater Tots
- Eggs
- Sausage and/or bacon
- Milk
- Shredded cheese
- Seasoning
Instructions
- I pulled out the GIANT muffin tin and, after spraying with Pam, I squashed some Tater Tots in the bottom of each section.
- I then layered some fried sausage in each.
- I combined beaten eggs with some milk, shredded cheese and seasonings. I poured a little over 1/2 cup into each muffin section. They were filled to the brim.
- Baked for 30 minutes at 350°.
- I enjoyed one for my supper.
- I believe they will be an easy and quick "microwave/heat and eat" kind of breakfast.
