With the entire state in double digits below zero (with anywhere from 20 – 30 degrees below zero wind chill factor), today is a good day for soup.
I snatched this recipe from Kiddo (worked with her at a little local restaurant). I love this woman’s cooking and wit! Not only is it as easy as she said but it’s so good it tastes like a secret!

Kiddo's Tomato Soup
Ingredients
- 1 gallon of canned tomatoes (prefer buying diced so I don’t have to)
- 1 heaping teaspoon of baking soda
- One onion - chopped
- Several stalks of celery - chopped
- 1 teaspoon season salt (Lawry's)
- 4 cups chicken broth
- 1 1/2 quarts of cream
- Parsley Flakes
Instructions
- Saute onion and celery in butter.
- Put tomatoes in a pot and bring to a low boil.
- Add baking soda and remove from heat. Stir the froth down and return to the stove. The soda takes the acidity out of the tomatoes and it simply is smooth and perfect for the North Dakota winters.
- Add sauteed veggies, season salt and chicken broth to tomatoes.
- When soup is warmed through, add cream and parsley flakes.
