Best Burritos Ever
Ingredients
- Pkg 8" tortillas
- Pkg Hormel Taco Beef Crumbles (12oz)
- 1 onion sliced into rings
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 cup spinach sliced
- 1 cup baby carrots thinly sliced
- 1/2 tsp of oregano
- 1/2 tsp black pepper
- 1/2 tsp garlic salt
- Eggs-
- 8oz sour cream
- 6 eggs at room temp
- 1/2-1 cup grated cheese
Instructions
- Preheat oven to 350°.
- Fry veggies on medium heat until they are soft and then add beef crumbles.
- Beat eggs until fluffy and add cheese and 2 Tbs of sour cream. Mix in the sour cream gently. Fry on medium to low heat until just cooked.
- Building them:
- Put down a sheet of foil, put down one tortilla. Put a serving spoon of beef and veggie mixture on the middle of the tortilla. Then add a dollop of sour cream and finally a serving spoon of eggs on top. Fold up burrito and seal with the foil.
- Put in baking dish side by side and bake for 10 mins and 350° F.
- Serve and enjoy!!
