Zucchini Cake
Ingredients
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp salt.
- 2 cups sugar
- 1 cup oil.
- 3 eggs
- 2 cups raw grated zucchini
- 3 tsp. Cinnamon
- 3 tsp. vanilla.

Instructions
- You will then add the flour mixture to the liquid mixture. Blend until well mixed.
- Bake at 350 degrees. If you are using a jelly roll pan, which is what we normally use, it takes about 20 to 25 minutes. If using a regular cake pan, it might take 30 minutes. Be sure to test with a toothpick inserted in center of cake to verify if done.
- 1 cup sugar
- 6 Tablespoons margarine or oleo
- 1/2 cup evaporated skim milk or use cream
- 1 tsp. vanilla
- Mix and boil 2 minutes. Pour over cake.
- If you prefer a cream cheese frosting, just use your favorite one! I normally just throw the cream cheese (softened) and powdered sugar together, with a little vanilla, until it tastes the way we like.
Enjoy plain or add the following glaze:
