I didn’t know how to cook when Jake and I got married. For several months, the two of us lived on spaghetti, frozen pizzas, and pancakes. When summer rolled around the year I was pregnant with Grace, I was suddenly in charge of cooking for nearly a dozen hired men. I didn’t know which spices to use, or how much salt to put in recipes. I panicked, and to play it safe, I put nothing in. That’s right. Nothing. No salt, no pepper, no onions, nothing. Those poor, poor hired men.
They all grinned and bore it as well as they could, and through the years, I’ve learned a bit more. I use salt now, and spices, and seasonings. I’ve learned which meals hired men tend to enjoy the most, and most importantly, which ones my husband likes the best.
I cook the favorite recipes, I take the food to the field, and the guys eat it. A lot of it. Sometimes even all of it. Those men can put the food away, and I find myself going to the grocery store quite often.
Today was another grocery shopping day, which I love. I know some people hate going grocery shopping, but it’s a lot of fun for me and the kids. Piling the cart full of food, walking with my children, it’s usually pretty enjoyable.
My cart looked impressively healthy, until I put that giant box of cookies on top.

Until the unloading part, that is. You know how it goes. You buy an entire cart worth of groceries, load it all into the back of the van, drive home, drag it all inside, then spend the next hour putting everything away, only to be too tired to cook lunch for your children and just eat Sonic instead. Maybe that last part is just me.

Today’s menu (once I summoned up the energy to cook after unloading everything) was chicken enchiladas, berry salad, rolls, corn on the cob, and sugar cookies. You know those amazingly soft sugar cookies with the sprinkles on them? I was doing really well at the store until I found a box of those Lofthouse sugar cookies, and then all self control went out the window. In the name of laziness, I took those cookies out for dessert. The rest of their meal was homemade, though, and I even used salt.

Ingredients
- 1 chopped onion
- 2 cans of chicken breast
- 1 can cream of chicken soup
- 1 can of Rotel diced tomatoes and green chilies
- 1 cup sour cream
- 1/2 mozzarella cheese
- Mix ingredients together, and wrap into tortillas. Top with shredded cheddar cheese and more Rotel. Cover with foil and bake at 350 for an hour.
